The holidays

I hope everyone had a very nice Thanksgiving.  Once again we hosted the holiday at our house, having a total of ten people this year.  I don’t know why I kept thinking eleven- – eleven was just stuck in my brain for some reason.  I did the usual roasted turkey as well as a smoked turkey, dressing and gravy, stewed okra and tomatoes with bacon, green bean casserole, cranberry sauce, black olives, a pumpkin pie with a streusel pecan topping and an apple cobbler.  Mom brought her famous banana pudding- -I don’t know how she does it, but it is truly exceptional!  My sister-in-law brought her usual fruit salad and crescent rolls, along with a hash brown casserole.  My future daughter-in-law and son made Filipino barbecue pork kabobs as well as empanadas de carne.  My future niece-in-law and nephew brought a broccoli rice casserole, a variety of cheese balls and crackers as well as the cutest turkeys made from pretzels, Rolos, candy corn, etc.  I’m slowly delegating more of the cooking duties to the younger generation, getting them ready for when we move and I’m no longer captaining the ship, so to speak.  Everyone is always welcome in Tennessee, though, but the drive is a real PITA, lol!

I’m slowly taking down the fall decorations and replacing them with the Christmas ones.  Yes, I put the fall ones up in August because I was so sick and tired of the summer heat, and that’s where the decorations stayed until today.  I probably won’t get everything up and in place until the end of the weekend, but I’m working on it.  I’m also entertaining the idea of playing around with the Christmas menu.  I always do some type of ham, but for some reason a prime rib roast or a nice stuffed beef tenderloin is starting to sound appealing.  I might even do an oyster stew for the first course as a nod to my grandfather’s New England roots.  I already have a request in for my Coconut Snowball Martinis, so that’s definitely on the to do list.

Thanksgiving’s unexpected hit this year was some Apple Cider jello shots.  I had never had, nor made, jello shots, but I ran across this recipe and it sounded soooo good.  If you like the cinnamon red hots, you’ll love Fireball Whiskey.  And if you like Fireball Whiskey, you’ll love these Apple Cider jello shots.  I’ll post the recipe below so you can give it a whirl (found at



  • 1 cup water
  • 2 cups plain Apple Cider (nonalcoholic type)
  • 1/2 to 1 cup Fireball Cinnamon Whiskey
  • 1/2 cup Sour Apple Schnapps
  • 2 envelopes, or 0.5 oz, of Knox Gelatin (each envelope is about 0.25oz)  This is PLAIN gelatin, not a flavored Jello.


  1. Pour the water and apple cider into a saucepan and heat over medium heat.
  2. Pour in the Knox Gelatin and dissolve.
  3. Remove the saucepan from the heat after the gelatin is completely dissolved, and let cool to room temperature.
  4. Pour in the Fireball and Apple Schnapps
  5. Let the mixture cool a little before pouring into plastic jello shot cups.
  6. Put in the fridge until the jello is firm enough (2+ hours)

Makes around 16-32 jello shots depending on how generous you are with each shot. Be careful not to mess with the amount of liquid or the jello could be too runny or too firm.
